exclude: add docker folder to containers and VMs preset

Hi! I've added the docker directory ($HOME/.local/share/docker) to the "VMs and Containers" preset. It seems podman uses that directory for storing overlays as well, since I never had docker installed but its directory is full of my data from my podman containers.

Do you think this change is "non-trivial" enough to be included in the CHANGELOG.md? If you do, I'll gladly add it there 😉
