chore: Update gtk and related dependencies
Based on secret: Use oo7 instead of libsecret (!1189 - merged).
The first commit is mostly changes required by the update, although it also includes switching to glib::Object::builder() when creating an object with properties, which wasn't strictly required.
The follow up commits are mostly cleaning up thanks to new APIs available.
