Text mode not scanning certain words. Really bad !
I am a user of Document Scanner 3.36.3 included in the normal distribution of Ubuntu 20.04.5 LTS (GNOME version 3.36.8). I have an EPSOM XP-615 printer and scanner. When i use the "Text" mode and "Multiple Pages", Document Scanner sometimes does not scan a few words or digits toward the bottom of a page. This happened approximately on 1 every 5 pages. This is really bad if you are scanning legal documents, where every word matters, and the problem is on an internal page, so you do not notice, but a lawyer or public administrator will take decisions based on the scanned document. I guess the "Text" mode performs some sort of pattern recognition, so there will be always a probability that it will not recognize certain alphanumerical characters. I strongly recommend to remove completely the "Text" mode, the benefits are not worth the risks (you could replace with a "Low-resolution" mode, which does not attempt to do any pattern recognition). I understand that my proposal can be opposed by developers which spent lots of time on the "Text" mode and are emotionally attached to their code. As a minimum you should permanently replace the string "Text" with something like "Text (experimental)" or "Text (not guaranteed)"
