compress-dialog-controller: More useful descriptions

macOS and Windows now supports more archival formats so we can give descriptions based on when someone might want to use each one.

Windows supports all formats through libarchive.

They also apparently support password protected .zips, but in my testing, whatever algorithm Nautilus is using gave me an error when trying to decompress so we should probably keep the warning.

For macOS I wasn't able to do testing nor could I find a primary source, but they seem to use the same libraries across their OS-es and on iOS, I could test that all formats are supported. It would be great if someone with access to a Mac could verify it though.
