tests: Don't copy extended attributes when testing pseudo-files

It seems that on SELinux systems, files in /proc have extended attributes that cannot be copied by an unprivileged user.

I am not able to test this: I do not have a SELinux system, and I certainly don't have access to the CI that Red Hat uses for libostree. Please could someone who uses a SELinux OS test this?
