Build more things in macOS CI

All build options have been reevaluated to see which ones are really required to get a working build with the goal being to have a more default kind of setup. As it turns out, a lot of previously disabled features no longer need to be disabled.

I call your attention to look at the "build test suite" commit as it includes changes that are not macOS-only but I'm also not seeing any side effects in other jobs.
