Allow for displaying content from previous GNOME versions
The content displayed in GNOME Tour pages is tied to GNOME Tour's own version, meaning that GNOME Tour 42 will have content/data for the GNOME 42 release, and so on...
My proposal is to introduce a mechanism to allow the same GNOME Tour version to present content for past GNOME versions (when specified) and default to the current one when a version is not specified. I don't think we should add old GNOME content retrospectively, but we could start versioning and preserving the content from 42 onward.
This could be useful for distros that distribute GNOME Tour as a Flatpak such as Silverblue and Endless OS. See https://github.com/fedora-silverblue/issue-tracker/issues/252#issuecomment-1127548967
