Setting document type to "Plain text" is not possible

Steps to reproduce
- Open GNOME Text Editor
- In the title bar, click the settings icon to expand the settings drop-down menu
- In the drop-down menu, click "Document Type" to open the "Document Type" dialog
- Select any of the available document types
- Close the "Document Type" dialog
- Open the "Document Type" dialog again as described
- Attempt to set "Plain text" or "Text" or "None" as document type, which fails, because there is no such document type
Current behaviour
There should be a way to set documents to type "Plain text", to prevent errorneous syntax highlighting for unstructured text. There is however no such document type available for selection. Options to remove the document type, or to disable document type-specific syntax highlighting for a specific document, are not apparent. Holding e.g. Ctrl while clicking on the currently selected document type does not de-select the document type either.
Expected behaviour
In the "Document Type" dialog there should be, possibly separate from the list of available document types and in an exclusive-or relation to the selection in said list, a "No document type" user input, possibly a toggle button.
Alternatively, there should be a regular "Plain text" document type available in the selection list, and it possibly should be the first item in the selection list.
