Icon inheritance not working as expected

Arch Linux GNOME Shell 43.3 Using Wayland, issue affects XOrg as well. Enabling/disabling extensions does not affect the issue.
Bug summary
Changing the current icon theme from the default Adwaita to a theme that falls back on Adwaita (MoreWaita in this case) makes some symbolic icons get replaced by full color ones. None of the affected icons is in the MoreWaita theme, they're all part of Adwaita, so they should be inherited all the same when referenced by an app. This also happens randomly, as in only some apps are affected. Also, more apps are affected if the icon theme is installed for the current user then if installed system-wide.
Steps to reproduce
- Install and enable an icon theme that falls back on Adwaita
- Check an affected app (Evolution is the best example since many icons get affected there)
What happened
Many Adwaita symbolic icons got replaced by their full color equivalents, also from Adwaita, so not coming from the child theme.
What did you expect to happen
When enabling the child icon theme that falls back on Adwaita I was expecting all the Adwaita icons that don't get overwritten by the child theme (all of them in this case) to remain in place as if still using Adwaita.
