assistant: Use flat headerbar

𝅳Automeris naranja requested to merge automerisnaranja/gnome-initial-setup:flat-headerbar into master

.flat style class is deprecated, but this change is just a stop gap until g-i-s gets ported to AdwToolbarView. Using a flat headerbar will make g-i-s to look more consistent with several apps that use AdwToolbarView.

Also, set GtkHeaderBar's "show-title-buttons" property to false.
