datechooser: Update day text styles for readability

Sam Hewitt requested to merge wip/snwh/mini-calendar-text-styles into main
  • sync the visuals with that of the mini-calendar in the Shell
  • make other month days more visible/have greater contrast

This is to carry over changes made to the shell mini calendar in which people took issue with the visibility of text as well as distinguishing the workdays from weekends
