sourceview: Add missing keybinding for selection.join and .sort

António Fernandes requested to merge 2145-join-lines-and-sort-lines-keyboard-shortcuts-not-working into main

Presumed to be lost in the port to GTK 4 / GtkSourceView 5, as these actions used to be signals and the keybindings were set in the CSS theme.
