core/gnome-shell: do not build the extenions app

Jordan Petridis requested to merge alatiera/disable-extnesions into master

While its part of the shell build, its not really part of GNOME core and its better distributed from Flathub.

It also already has its own CI so we don't need to worry about it not building anymore if we disable it.
