Update pinephone CI tests (GNOME-43)

This MR deals with updating the CI tests for the PinePhone and PinePhone Pro

• We remove the unneeded UI tests
• Rename the script to indicate it is for both phones
• Remove GNOME-Tweaks test since it is not a part of the image and causes the tests to crash

Note this is intended to fail as I have separate MR to deal with fixing the tests, ensuring they run and pass

• Merge Request for PinePhone | GNOME-43 that deals with updating the kernel

There is no MR for the PP Pro as of yet, but I intend for it to follow the same setup, i.e, updating the kernel and adding configs
