docs: Improve conversion-macros formatting and add GTYPE_TO_POINTER/GPOINTER_TO_TYPE

Noticed GTYPE_TO_POINTER(), GPOINTER_TO_TYPE() were missing from the docs, so decided to add them.

Also improved the formatting a bit. Not strictly needed, but looks better imo.
