build: Call override_find_program() for gtester

Philip Withnall requested to merge pwithnall/glib:3040-gtester-override-find-program into main

Just in case anyone tries to look it up using find_program() in a meson.build in GLib (or a project pulling GLib in as a subproject) in future.
