gtlsconnection: clarify handshake() documentation

This tries to clarify some confusing aspects of the g_tls_connection_handshake() that can trip up experienced developers.

CC @chergert who noticed these issues. WIP because I want to investigate client authentication a bit more before baking this into the docs.
