GIMP using unicode characters to display system text

- Operating System: MacOS 11.3.1
Issue Description
I just downloaded GIMP 10.2.22 (version 3) for Mac OS. When I opened the program (and while it was loading), while the program was loading, most of the text displayed in the dialog box was unicode (gobbledygook). Also, once the program was "open", most of the system text is still rendered in unicode. For example, when I tried to open the “preferences” dialog, I couldn't read anything since all the text was still in unicode. (see the attached screen shots)
In addition to bringing this issue to your attention, I'd love to know how to resolve it. I should point out that when I opened up the same version of GIMP on a different Mac (also running MacOS 11.3.1), GIMP worked perfectly. I also checked the font lists in /System/Fonts for the two Macs and they are identical.
