window: redo the headerbar labels and tooltips

Redo the headerbar button tooltips to follow the GNOME HIG recommendations: use short labels, use standard labels and use header capitalization.

For the Extract button add ellipsis to the button label as it requires further input and confirmation.

Fixes #189 (closed).
