Add Appearance settings into Preferences
I'm not going to go into the pros and cons of the new header bar since it's entirely someone's opinion/preference, but there needs to be a way to disable this feature, without having to use the command line or look through the git history to find some obscure command. I updated my system and suddenly evolution looked absolutely awful, I went through the menu bar options to try and figure out how to restore it to a usable state yet nothing worked until I went through the git history and found this after much faffing about (I thought it was originally CSD/client side decoration and was getting no hits for those results and also got nothing for title bar)

I#2039 - Add option to disable use of header bars
Users can use:
gsettings set org.gnome.evolution.shell use-header-bar false
to turn off header bars.
Closes https://gitlab.gnome.org/GNOME/evolution/-/issues/2039
So that other people do not have the same issue as me, it would be much preferable to be able to change this from the menu.
