This MR

documents the states used on the DBus side,
marks a couple of the states as deprecated (see discussion in World/Phosh/libcall-ui!28 (comment 1355136))
stops using deprecated states by adjusting the mapping from CallsCallState to CuiCallState and using a GBindingTransformFunc in the DBus manager

There is some more decoupling/cleaning up incoming.
