Use gtk4paintable sink in flatpak

This is !50 (closed) plus the needed bits to use it in the flatpak and a new env variable to force the built in sink.

@sdroege I made some trivial indent fixes like using C style comments to !50 (closed) and automatic cleanup I didn't want to bother you with and pulled that commit in here (keeping your authorship).
