ci: Run doc check in ci

I wondered why the new introspection warnings in !1407 (merged) didn't make the pipeline fail. Turns out we were only using it for phoc but not for phosh. 😅

Let's fix that and make it a bit faster while at that too. Looks like a good candidate for a common job in the future.
