docs: Document the AnimationMode definition

Both ClutterAlpha:mode and ClutterAnimation:mode can be defined using:

  • an integer id
  • the "nick" field of the AnimationMode GEnumValue
  • a custom, tweener-like string

All these methods should be documented.
