External USB-C Monitor has stopped working properly (only on Gnome 40 / Wayland)

Bug summary
External USB-C monitor no longer works. It shows no video - and changing resolution to half native 4k in gnome settings it starts showing again. It can also only use one external monitor at a time it seems.
If I use XOrg, or KDE Wayland - my monitor works perfectly, but not in GDM or Gnome / Wayland.
I'm happy to provide further debug info if it is helpful - but my external monitors worked perfectly until recent upgrade.
Steps to reproduce
Current arch linux full gnome, gdm, pipewire install - try external USB-C external monitor. Does not get video.
External monitor in question is a LG27UD88-W 4k 27" external monitor, via USB-C.
What happened
Video output simply not working correctly.
