Would it work if I launch all applications through gnome-terminal? Or it working only for activities in gnome-shell?

Well, gnome-terminal is itself a DBus service. It has always been in a systemd scope that is created by the dbus-daemon already :)
As Florian said, this is only relevant for applications spawned directly by gnome-shell. If you want to do something similar for applications yourself, use
systemd-run --user, which will have a similar effect.
Note that the purpose is more about moving these processes out of the
gnome-shellsystemd service. It is much less about placing each process into its own sandbox (at least for now).
