appDisplay: Use empty icons as placeholders in folder icons

Use empty StIcons instead of StBins as the placeholders for the folder-preview icons. This has the advantage that we can use the unscaled size as icon_size for the StIcon and it is also updated on scale factor changes, which isn't working right now.
