Hardcoded keybindings (e.g., Super+1,2,3..., Super+P) silently conflict with user-defined ones

I am using Fedora 31, GNOME 3.34.4, and I have recently encountered the following problem: I am used to having Super+1,2,3... switch workspaces and I also wanted to assign Super+P to some other action. Though I was able to set those keybindings using GNOME Settings, they seem not to work as I intended. Instead, I realized that Super+1,2,3... launch favourite applications from the dashboard, and Super+P is used for quick monitor configuration.
I believe it would make sense to either make all the hardcoded keybindings configurable through GNOME Settings (personally, I would prefer this solution), or at least make it impossible to assign actions to them via GUI, because what I encountered was completely unexpected.
By the way, could you please tell me, how can I get a list of all the hardcoded keybindings, so that I do not run into the same situation again?
