This was still mangled after the project rename. Also add a note to the
README that one needs to change the sink in pulseaudio manually.

The main point of doing this is to allow debugging the various encoders
without recompiling. This also simplifies the selection code a bit which
is a nice side effect.

This was renamed to ND_DUMMY together with other renames, but it seems
more sensible to have a longer string in this case.

Most o the mentioned issues have been fixed and audio is also supported
if a supported encoder is found.

With this one can testing streaming to e.g. VLC to check how well that
works.
