Hard to control what the Wifi is doing: No way to actively disconnect from a connection

With the redesigned WiFi Network settings, I'm finding it very hard to control what my system WiFi is doing. I have not managed to perform simple tasks:
- Disconnect from a specific WiFi network
- Abort the connection process to a WiFi network
- Disconnect from all Networks (even known ones) while keeping the WIFI device online so I can see the Networks around me
I'm for simplifying settings as far as possible, but the redesigned simplified it so much that only the most basic use cases are covered (single configured home network that works fast) is covered.
Setting up WiFi in more complex environments with multiple available and configured Networks is a nightmare: while I'm trying to set up one network where I forgot the password, the system always connects to the wrong network after the initial connection failure.
Sometimes, clicking on an entry in the network list doesn't do anything, and sometimes it connects to that network and makes the list disappear and rebuild.
