Flatpak/Builder clean up

• Switch from --socket=x11 to --socket=fallback-x11 for better sandboxing
• Remove a env thing for libgweather that isn't useful anymore since the migration to Meson upstream
• Remove geoclue & gnome-desktop vapi files, both ship that upstream now
