Documentation only: Added clarification about GWeakNotify and removed ambiguous text

The text corrected by this commit led me to ask a question on GNOME Discourse. I corrected it with words from @ebassi from the same discussion.

By digging deeper, I discovered that the same text might have looked ambiguous for others too in the past.
