Drop GIInfoType from libgirepository internals

!3906 (merged) removed it from the public API, but it’s still a bit unnecessary since libgirepository switched to GTypeInstance (see #3155 (closed)) so it (and related APIs) should be removed entirely internally, and GType used internally instead.
