Changing existing font dialog is unfriendly

Description of the bug
User story: I want to be able to try a few different fonts with an existing piece of text in an image to see what works best.
I have various issues with the "edit text" dialog, specifically when trying to change the font of an existing text section:

The dialog (for me) is transparent. I'm not sure where this theming came from - maybe the plasma theme I have? But nothing else in my general UI is like this. I would suggest that gimp override any system theming that introduces transparency. Again though, I don't have any other dialogs in any other apps that are transparent.

Cannot move the dialog. Maybe I want to see more context to pick the right font, but the dialog's right on top of my image. See: #5113

Cannot click to view list of fonts. The best I can do is search by name, at which point I get an autosuggest (which is quite overwhelming). See: #8995

Cannot make font changes from the tool window in the sidebar to existing fonts (which is I think how this used to work). See: #344

Have to highlight the text to make font changes. I can see the rationale, but that leaves the highlighting decoration in place, which means that the workflow to try out a few different fonts with the same piece of text is quite cumbersome.

If I delete all text after making a font change (maybe I want to reformulate it) the font/size resets to whatever's chosen in the sidebar on the left, not whatever I had just configured this piece of text to be. See: #344
