In the composer, From Override field is not saved between messages

Currently, I have 1 single gmail address, but, as I have my own domain, I actually use those domain address to send email to people. Typically, in Thunderbird, I can save multiple From override for my single email address.
Here is how it looks like (also see the screenshot):
John Smith <spam@domain.com> - john.smith@gmail.com
John Smith <job@domain.com> - john.smith@gmail.com
Johnny S. <other@domain.com> - john.smith@gmail.com
This appears as a drop down in the From field when composing an email.
Now, I really like Evolution, but this feature isn't that easy to replace.
To do so, when I compose an email, I always show the From override part to be able to fix that bit.
It looks like that (also see the screenshot):
From: john.smith@gmail.com
Name: John Smith Address: spam@domain.com
The only problem is that those values aren't saved, and I need to manually fill them in each time I:
- compose a new email;
- reply to an email (making sure I re-use the same from-override).
Therefore, I'd like to at least have them saved, so that I can select them easily everytime.
Of course, it would be even better if those values would be re-used when I reply to somebody I sent an email to with a From override.
Is that a fair feature request, or is this supported in another way and maybe I am misusing Evolution?
Tested on Gnome Evolution 3.28.2 under Archlinux.
